Domaine du Castel Winery was founded in 1988 in the Judean Hills near Jerusalem by Eli ben Zaken. Since then, the Estate's winery have become world famous. However, due to the high altitude of the vineyard their yield is very limited. Handpicked, the grapes for Domaine Du Castel Blanc du Castel Chardonnay follows the Bourgogne style of winemaking and are barrel fermented and aged 12 months on its lees in French oak.
