The Grapes for the reserve Shiraz come the vineyards of Shadmot Dvora in the shadow of Mount Tabor in the Lower Galilee. Picked during the first weeks of August to be fermented for 10 days then transferred into French oak barrels to mature for about 14 months.
Although this seems to be a lengthy process, the fruits of this labor do not go without reward as Dalton Reserve 2012 is an exceptional vintage and a house favorite.
Notes: Dry, full-bodied. Aromas of blueberry, vanilla and nutmeg with flavors of blueberry, cherry, white chocolate and orange rind
