The grapes for this darker side of Pinot come from premier, cool-climate growing regions in Monterey County. After harvest, the grapes for Mark West Black Pinot Noir are put through the French process called "SaignÌe." it's here that the lighter colored wine is removed before it soaks into the grape skins. This is done to the Pinot Noir its deep, full-bodied flavor and dark color.
